Key ingredients

We make a ready-to-run vanilla, chocolate and sweet cream custard that will allow ice cream parlors to share their great flavor creations with the dairy-free community.

SCRATCH-MADE OAT BASE

Our artisans oat-base is made with just two ingredients: water and oats. You will find no preservatives or additives in our product as we aren't concerned with extending the shelf life. We make what we use every week to create our clean label, creamy custard.


 FRESH EGG YOLKS   

There are number of properties in egg yolk that ensures a frozen dessert isn't chalky and undesirable. And we decided that we would take the risk of having a smaller market rather than an unpleasant product. So after our proprietary oat-base, the most important ingredient in our custard are fresh egg yolk. You will appreciate the difference it makes.

ALLERGEN FRIENDLY

Almost as important as what we put into our base are the things we leave out. Our product is free from seven of the major eight allergens, and I think you can guess which one our ready-to-run cream contains. That means you won't find dairy, lactose, gluten, soy, peanuts, tree nuts, or artificial ingredients in any of our batches.

We are intimately involved in every step of the process. Our hands-on approach ensures a high quality product for each and every batch.

 SMALL BATCH   

To consistently ensure a high quality product every time, we make our custard one gallon batch at a time. Each ingredient is meticulously measured and every step of the process is temperature checked to adhere to NCDA regulations and to guarantee the same creamy, rich consistency every time. There is no protest against technology here. We just can't afford it right now. So until we can get equipment that can produce larger batches while ensuring the excellence we are known for, we take our time and do it right every time so our customers are satisfied with each experience. 

 HAND-STIRRED   

The best way to quality control a product to guarantee excellence with each batch is to be intimately involved in the process. So along with measuring and temping our custard throughout the creation process, we make sure we can feel it (not with our hands of course, because that's nasty). Each batch is hand-stirred with a stainless steel spoon and watched closely ensuring the custard doesn't overcook and that there is an even cook with each batch. And when you taste our products you will know that to be true. 

 AGING   

You can't rush greatness. In order for the flavors to delight your taste-buds with each bit, the ingredients must be given time to infuse with the custard. So after an hour long cook and cool process, we strain our custard and place it in the refrigerator overnight to let the deliciousness happen. And once that process is done you will know that you are eating something special.
